Chai Spiced Pancakes

In the winter months, when fresh fruit and veggies are hard to come by, I love to turn to my spice cabinet. A world of healing and magic exists in those tiny bottles of flavor.  Chai is a delicious combination, and levels up so many drinks and foods. Typically chai is made with black tea, but for these pancakes we are just utilizing the flavors, so there is no caffeine, and even little ones will love them.

These pancakes are the coziest breakfast to make on a chilly Saturday morning! They come together with simple pantry staples, and they freeze well too for easy toaster pancakes. Enjoy!

The Steps!

INGREDIENTS:
1 cup flour
1 & 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 cup buttermilk ( or 1 cup any milk + 1 tbsp lemon juice)
1 egg
2 tbsp olive oil
2 tbsp sugar
1 tsp vanilla

 


1. Preheat skillet to medium low heat. I love cast iron for these!

2. In a small bowl, combine dry ingredients (flour, sugar, baking soda and powder, salt, and spices). In a medium bowl, combine wet ingredients (egg, olive oil, vanilla, buttermilk).

3. Pour the dry ingredients into the wet and stir until just combined. 

4. Once the pan is hot, add a tablespoon of butter or oil to grease and pour your pancake batter in your desired size. 

5. Once it starts to brown and bubble, about 2-3 minutes, flip!

6. Enjoy immediately with maple syrup, powdered sugar, or fresh fruit! This recipe will make about 8 medium sized pancakes. Leftovers freeze well for easy toaster pancakes as well!
